Ingredients

1 handful of fresh pineapple chunks
0.5 cup Rubicon Coconut Non-Dairy Beverage
2 oz Rubicon Pineapple Coconut juice
1.5 oz Altos Tequila

Method

Blend the pineapple chunks with the Rubicon Coconut Non-Dairy Beverage until smooth. (This is your pineapple–coconut mix.)
In a shaker filled with ice, combine 2 oz of the pineapple–coconut mix, 2 oz Rubicon Pineapple Coconut juice, and 1.5 oz Altos Tequila.
Shake well until chilled.
Strain into a glass over ice and garnish with pineapple or lime.
