Ingredients

0.5 oz elderflower liqueur
0.5 oz lemon juice
1.5 oz gin
Tonic water
1.5 oz Rubicon dragon fruit juice
Ice
Dragon fruit slices and wheel
Lime wheel

Method

In a rock glass add dragon fruit slices, elderflower liqueur, lemon juice, and gin and muddle.
Shake well and strain into a martini glass.
Stir gently and float Rubicon dragon fruit juice on top.
Garnish with a dragon fruit wheel and lime wheel.
If you are looking for a non-alcoholic option, simply remove the alcohol from the recipe.
