Ingredients

6–8 mint leaves
½ passionfruit pulp
1 oz lemon juice
1 oz simple syrup
2 oz Rubicon passion fruit juice
1.5 oz vodka
Soda water or Rubicon passion fruit sparkling drink
Ice
Lime wheel (as garnish)
Mint sprig (as garnish)

Method

Add mint leaves, passion fruit pulp, lemon juice, simple syrup, Rubicon passion fruit juice, and vodka to a highball glass.
Add ice and top with soda or passionfruit sparkling drink.
Garnish with a lime wheel, mint sprig, and half passionfruit.
If you are looking for a non-alcoholic option, simply remove the alcohol from the recipe.
